Native fermentation led the first-pick-tank named Aroha, whilst the clone ‘Noir’ tank was inoculated under the name Aries. Aroha did finish MLF completely, bringing a circular heart to the crisp acidity of Aries. The two lots were brought together at dryness and enjoyed 10 weeks of marriage before bottling.
