Ruben Diaz Viticultor Dore & Blanco Cebreros 2024 750ml

Chasselas, Malvar, Chelva, Jaen Blanco; A twist on Rubén’s perennially popular Doré Blanco, Doré &+ (pronounced “Doré Y Plus”) is a blend of 40% Chasselas Doré from 75-year-old vines planted on decomposed granitic sandy soils at 630m altitude in Cebreros and 60% assorted white varieties from 50+ year-old vines planted at 900-950m in San Bartolomé de Pinares: Chelva, Jaen, Palomino, and Garnacha Blanca. The Chasselas Doré was destemmed, fermented with 6 days of skin contact, and raised on the lees for 8 months in stainless steel. The other varieties were destemmed, co-fermented with 20 days of maceration on the skins, and aged for 8 months in stainless steel, then blended and bottled. 350 bottles produced.
