Organic, Biodynamic. 100% Malbec, drawn from a special massale plantation of vines from 1971. The vineyard is from a wider plot in the elevated plateaus of the Cahors appellation, specifically located in the commune of Sauzet. The specific parcel for this wine is on a stony red clay soil, rich in iron, manganese, and mica; this is on top of Jurassic limestone bedrock. Destemmed fruit without crushing the berries, ferment in concrete tanks with gentle punchdowns/pumpovers for moderate extraction, 20-25 days of maceration and ferment. Racked to neutral oak barrels for 24 months of aging. Unfined and unfiltered. This is a profound bottle of single-vineyard Cahors, full of violet, subtle incense, cool purple tones, and energy on the palate. A marvelous proof of the beauty and sheer potential of this appellation often obscured by bulk production.
