This varietal is rarely vinefied on its own as it produces more structured wines that need time to age. Higher tannin levels are the norm, but with a couple years of bottle age, this can be quite fun. Although somewhat rustic, it carries good tension and freshness. Some floral notes from whole cluster fermentation lead into a serious, somewhat austere wine. Nice warm flavors develop with air and this will go best with hearty winter fare.
