Certified Organic, practicing Biodynamic. 55% Chardonnay, 45% Pinot Noir. Both varieties taken from the single vineyard of Reichsfeld, planted in the 1980s with south/southeast exposition on a combination of volcanic sandstone and rare schist soils. Primary fermentation in stainless steel, with a minimum of three years' aging on the lees in bottle after secondary ferment and before disgorgement. No dosage. Bone dry and peppery, with pretty pink florals and zesty aromas.
