Biodynamic & certified organic. 100% Chenin Blanc with an average age of 15 years old on red clay over sandstone. Hand-harvested September 30th, direct-pressed, settled in vats for 3 days, fermented with native yeasts and bottled unfined and unfiltered at the end of October. Aged for 3 years sur lattes and disgorged Jan 24 2025. Unfined and unfiltered with minimal sulfur.
