It means scant use or no use at all of foreign stabilizing additives like, sulfur, commercial yeasts, industrial sprays). It means a desire for the elements of nature to make an imprint on the wine. And thus, it means an openness to let wine develop on its own, with as little human intervention as possible. The purpose is to make a “raw wine”. An old-school wine of more wild, feral style.
Beyond these broad brush strokes, ‘natural wine’ is an unregulated term -- it’s a big tent with lots of ideas. Many wineries are guided by similar principles yet forego marketing as such. In fact, you won’t read “natural wine” on any wine label. Many wineries have been using these methods for decades or centuries, it's not a new method, but seems that way as it has been adopted by more winemakers and become more mainstream. Part of “being a ‘natural’ wine” is being novel or experimental, although through the last decade winemakers have dialed in their methods, and natural wines have as their own process, just as conventional wines do, and the wines have never been better.

What are you to expect from a natural wine in the Zero Zero club?
- Wines made with little to no added sulfites (note that some natural producers will use limited amounts of sulfur to keep wine from spoiling, but in undetectable amounts)
- Wines fermented with ambient, wild, uncultivated yeast.
- Wines made with minimal intervention in the cellar (in some cases no pumps, presses, temp control, etc)
- Wines with little to no use of oak, with a focus on freshness and letting the fruit shine. Aging vessels may include concrete, stainless, and clay amphora.
- Wines made with a focus on organics and biodynamics. A true natural wine can not use chemicals in the vineyard or cellar.
- Wines that are not fined or filtered, that may be hazy, cloudy, or have some sediment.
- Wines that display the whole spectrum--some wines may be clean, some wines may exhibit more natural aromas and flavors associated with natural wine. We will never include a wine that is dirty, mousy, or microbial to the point of being undrinkable. Our motive is to include natural wines that can be enjoyed by EVERYONE.
